Black pepper is one of the most commonly used spices in the world, adding warmth and zest to savory dishes. It has been popular in India for thousands of years and is now easy to find almost anywhere on the planet. It has been employed medicinally in both Ayurveda and TCM and more recently in herbal folk healing practices. In modern times, numerous studies have confirmed its healing properties. Several derivatives of black pepper, such as piperine, have shown promise in supporting the health of the digestive system and as an antioxidant. Further, it has demonstrated that it can enhance the absorption of other nutrients when taken simultaneously.

Peppercorns are the fruit of Piper nigrum, an evergreen climbing vine. Black, white, and green peppercorns all come form the same plant, but they are harvested at different times and handled in different ways. To make black pepper, the clusters are plucked when they are not quite ripe. They are then left in piles to ferment. After a few days, the berries are spread out on a mat and left to dry in the sun for two or three more days until they are shriveled and nearly black. To make white pepper, the berry is picked fully ripe. Its outer shrunken skin is rubbed off, exposing the dried, grayish-white pepper inside. White pepper has a milder, more delicate flavor than black pepper, and is useful for adding a peppery flavor to light-colored sauces and soup without adding black color. White pepper is popular in European cuisines.

This delightful salt is made with pure Hawaiian sea salt that is slowly cold smoked over Kiawe wood chips. The smoke from this naturalized mesquite tree creates a distinctively sweet smoky flavor that makes a tasty addition to seafood and poultry dishes. Try some in your next brine, or add it to your favorite vegetable dish or salad. The Kiawe tree is unique to the Hawaiian islands, and has naturalized over time from mesquite trees that were brought over in the early 1800’s. This unique gourmet salt is sure to add a smoky twist to all of your culinary creations.
